Ingredients
For the salad
- 2 cups finely diced broccoli
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- ½ cup fresh cilantro, chopped
- ½ cup fresh parsley, chopped
- 2 green onions, chopped
- 3-4 radishes, thinly sliced
- ½ cup sliced almonds (optional topping)
For the dressing
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 1 inch fresh ginger, minced
- 1 tablespoon honey
- ¼ teaspoon salt and pepper
Method
- In a large mixing bowl, whisk together the lemon juice, Dijon mustard, olive oil, minced garlic, ginger, honey, salt, and pepper until the dressing is well blended.
- Add the broccoli, cabbage, carrots, cilantro, parsley, green onions, and radish slices to the bowl with the dressing. Toss everything thoroughly to ensure the vegetables are evenly coated.
- If possible, allow the salad to sit for 10 to 15 minutes to let the flavors develop.
- Just before serving, give it a final stir and sprinkle the sliced almonds on top for added texture.
- Store any leftovers in an airtight container in the fridge for up to 5 days.
