Detox Salad with Lemon-Ginger Dressing

A light, crunchy detox salad full of fresh flavors and immune-boosting nutrients.

Ingredients

For the salad

  • 2 cups finely diced broccoli
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • ½ cup fresh cilantro, chopped
  • ½ cup fresh parsley, chopped
  • 2 green onions, chopped
  • 3-4 radishes, thinly sliced
  • ½ cup sliced almonds (optional topping)

For the dressing

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 inch fresh ginger, minced
  • 1 tablespoon honey
  • ¼ teaspoon salt and pepper

Method

  1. In a large mixing bowl, whisk together the lemon juice, Dijon mustard, olive oil, minced garlic, ginger, honey, salt, and pepper until the dressing is well blended.
  2. Add the broccoli, cabbage, carrots, cilantro, parsley, green onions, and radish slices to the bowl with the dressing. Toss everything thoroughly to ensure the vegetables are evenly coated.
  3. If possible, allow the salad to sit for 10 to 15 minutes to let the flavors develop.
  4. Just before serving, give it a final stir and sprinkle the sliced almonds on top for added texture.
  5. Store any leftovers in an airtight container in the fridge for up to 5 days.
