These lemon bliss balls are the perfect balance of sweet and tangy, offering a quick and nourishing bite to fuel a busy day. Simple to prepare and packed with goodness, they make for a refreshing and energising snack!
Ingredients
- 1 cup cashews
- 1 1/2 cup shredded coconut or coconut flakes
- 3 tablespoons honey sub maple syrup for vegan
- 1/4 cup lemon juice
- 2 tablespoons lemon zest
- 2 tablespoons hemp seeds
- 1/4 cup vanilla protein powder
- 1/2 tsp vanilla extract
Instruction
- Combine all ingredients in a food processor
- process until mostly smooth
- Taste and adjust sweetness by adding more honey, if preferred. if the mixture feels too thick, thin it out with 1-2 teaspoons of non-dairy milk.
- Scoop out 1 tbsp of the mixture and roll it into balls.
- Gently roll the balls in shredded coconut, if desired
- Refrigerate for about 30 minutes to set.
