Lemon Bliss Balls

These lemon bliss balls are the perfect balance of sweet and tangy, offering a quick and nourishing bite to fuel a busy day. Simple to prepare and packed with goodness, they make for a refreshing and energising snack!

 

Ingredients

  • 1 cup cashews
  • 1 1/2 cup shredded coconut or coconut flakes
  • 3 tablespoons honey sub maple syrup for vegan 
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons hemp seeds
  • 1/4 cup vanilla protein powder 
  • 1/2 tsp vanilla extract

 

Instruction

  • Combine all ingredients in a food processor 
  • process until mostly smooth
  • Taste and adjust sweetness by adding more honey, if preferred. if the mixture feels too thick, thin it out with 1-2 teaspoons of non-dairy milk.
  • Scoop out 1 tbsp of the mixture and roll it into balls.
  • Gently roll the balls in shredded coconut, if desired 
  • Refrigerate for about 30 minutes to set.
