This delicious carrot soup ticks all the boxes when it comes to immune-boosting goodness.
Carrots are high in carotenoids (Vitamin A) which are natural antioxidants great for supporting a strong immune system. We've also combined garlic, onions and ginger which not only add to the flavour but also contain nutrients that help the immune system fight germs.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 cup chopped onion
- 3 garlic cloves, smashed
- 2 cups chopped carrots (approx. 3 medium carrots)
- 1½ teaspoons grated fresh ginger
- 1 tablespoon apple cider vinegar
- 3 to 4 cups vegetable broth
- Sea salt and fresh black pepper
- 1 teaspoon maple syrup (optional) coconut milk for garnish (optional)
Method
- Heat the olive oil in a large pot over medium heat. Add the onions and a generous pinch of salt and pepper and cook until soft and translucent.
- Add the garlic and carrots to the pot and cook for about 8 minutes more, stirring occasionally.
- Stir in the ginger, then add the apple cider vinegar, and 3 to 4 cups of broth, depending on your desired consistency. Reduce to a simmer and cook until the carrots are soft, about 30 minutes.
- Remove from the heat and let cool slightly then transfer to a blender. Blend until smooth. Taste and add a little more salt and pepper if required. Add maple syrup here if you choose to include.
- Serve with a drizzle of coconut milk.
